Delicious Banana Bread

This recipe is a crowd pleaser! It is moist and delicious, and easy to make. Recipe is by Elise Bauer from Simply Recipes.

Prep Time: 10 minutes Cook Time: 55 minutes Yield: Makes one loaf

Ingredients

  • 2 to 3 very ripe bananas
  • 1/3 cup melted butter, unsalted or salted
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar (1/2 cup if you would like it less sweet)
  • 1 large egg beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups of all-purpose flour
  • Optional- Cinnamon, Nuts, Chocolate morsels

Method

  1. Preheat the oven to 350 *F (175*C) and butter a 4×8 inch loaf pan
  2. In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the melted butter into the mashed bananas.
  3. Mix the baking soda and salt. Stir in the sugar, beaten egg and vanilla extract. Mix in the flour.
  4. Pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour at 350*F (175*C), or until a tester inserted into the center comes out clean.
  5. Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving. Slice and serve.

How To Make A Delicious Crab Ceviche

This crab ceviche recipe is so easy to make you will find it to be a crowd pleaser. It serves well as an appetizer or a light lunch over a tostada or with tortilla chips. You can find several versions of this recipe but I have found this to be the best.

Ingredients

  • 1 Package of Imitation Crab Meat (I used 2 lbs for 10 people)
  • 1 small white onion or red, minced
  • 2 tomatoes diced
  • 1 cucumber, peeled and diced
  • 1 cilantro bunch, coarsely chopped
  • 3 large lemons or limes
  • 1/2 cup to 1 cup Clamato Juice
  • Salt and Pepper

Chop all the ingredients and place them in a mixing bowl. Squeeze the lemons or lime juice, add salt and pepper and Clamato juice. I added 1 cup of Clamato juice for a stronger flavor, but you can add more or less to your liking. Mix all the ingredients and refrigerate for one hour. This allows all the flavors to marinate and taste best when served cold. I love to put hot sauce (Tapatio) on top of my ceviche for a little kick. Enjoy!

How To Make A Strawberry Mule

With strawberries in season I was craving a twist on the traditional Moscow Mule. I found a delicious recipe from Ketel One. I added 1 oz of simple syrup to sweeten the drink a little and it was delicious!

Ingredients

  • 1.5 oz. Ketel One Vodka or your preference
  • 1 oz. fresh lime juice
  • 2 strawberries
  • Ginger beer (I prefer Bundaberg)
  • 1 oz. Simple syrup (optional)

How To Make

  1. Muddle strawberries in the bottom of the mixing glass.
  2. Add Ketel One Vodka, simple syrup and lime juice and shake with ice.
  3. Strain into a copper mug filled with ice.
  4. Top with ginger beer.
